Let's celebrate National Strawberry Day with this delicious Strawberry Salsa with Cinnamon Chips!! This can be served for dessert or as an appetizer. I usually make this strawberry salsa in the spring with market fresh berries, but it is just as good this time of year with strawberries from the grocery. The strawberries are sweetened, and tossed with fresh basil (can use mint). You scoop up this berry salsa with sweetened cinnamon tortilla chips - trust me, it's delicious.

For the Chips
3 large @missionusa Carb Balance tortillas
1/2 cup sweetener
1 Tbsp cinnamon
Olive oil spray (or avocado oil spray)

For the Salsa
3 cups chopped strawberries
2 Tbsp fresh basil leaves, chopped
1/2 Tbsp balsamic vinegar (white balsamic would be good too)
1/4 tsp salt
2 Tbsp @RxSugar Allulose Sweetener

Make The Chips:
1. Preheat oven to 350 F.
Mix together cinnamon and sweetener set aside. Line baking sheet with parchment paper and set aside.
2. Cut tortillas into triangles (I stack and cut all at once). Lay the tortilla triangles on the baking sheet. Spray with olive or avocado oil.
3. Sprinkle cinnamon sugar mixture over the chips, flip chips over, and repeat.
4. Bake for 10-12 minutes or until crispy (watch they will burn quickly)

Make The Salsa:
1. In a bowl, gently mix together the strawberries, basil, salt, sweetener, and vinegar. Let sit at room temperature for a bit to allow the flavors to meld.
Serve with the cinnamon chips.
