Gooey Chocolate Ganache

Preheat oven to 350° F

1 cup almond flour
1 tbsp baking powder
1/4 tsp kosher salt
3/4 cup RXsugar
1/3 Cup organic baking cocoa
6 ounces shredded zucchini
6 medium eggs
1 1/2 tablespoons olive oil
1 tsp vanilla extract

Add the dry ingredients to a food processor and pulse for 15 seconds. Add in wet ingredients and pulse until combined. Pour into a stand 9x5 loaf pan and bake for 45 mins. Let cool completely then top with Ganache.

2 ounces Lily's semi sweet baking chocolate
1 ounce butter
2 tablespoons RxSugar®

3 tsp heavy cream

Add ingredients to a small saucepan and heat on medium/low heat until melted and has a glossy shine. Let cool slightly before pouring over the top of the bread.
