Low FODMAP Cupcake Muffins

Ingredients

1 box vanilla Glutino gluten free cake mix
1 can pumpkin puree
2 eggs
1 tbsp pumpkin pie mix
2 ¼ tsp cinnamon
¼ ginger
IDEA: Add a little clove starting at 1/8 tsp
¼ tsp vanilla
2 tbsp RxSugar® Organic Pancake Syrup
(RxSugar® is Officially FODMAP Friendly Certified)
¼ Low FODMAP milk (i.e.: unsweetened almond milk)


Directions 

  1. Use hand mixer to combine all ingredients
  2. Cook at 350 for approximately 15 minutes
  3. 2 muffins per serving
