Healthy Eats With DeeDee Lava Cake Recipe

I was craving a chocolate lava cake again and… extra lava? This is what happens when you take it out 1 minute too soon. Still so yummy though, the second one came out perfectly.

The recipe below will make you 2 single serve cakes. These came out so much better than I expected, they tasted amazing! I found a recipe on Pinterest from introvertbaker and kind of followed her recipe using some substitutions. Making lava cake requires precise ingredients so I did have to use a scale and weigh my ingredients in grams, this will ensure it bakes perfectly & has the gooey lava center. Here’s how I made them:

3 ounces chocolate chips
1 egg
1 egg yolk
37 g butter
33 g sweetener rxsugar
1/2 TSP vanilla extract
15 g almond flour
Dash of salt

Preheat oven to 450 and grease your ramekins. Melt chocolate & butter in the microwave, stir until smooth. Beat egg & yolk for 2 minutes until fluffy. Add in sweetener and vanilla. Add in melted chocolate and stir with a rubber spatula until combined. Add flour and gently fold until combined. Divide batter into your 2 ramekins and bake for 10-12 minutes. After removing from the oven, wait one minute, and flip out onto a plate. I baked mine for exactly 12 minutes, and it came out with the perfect lava center. Top with ice cream or whipped cream for the perfect treat. Be sure to try these out!
