Carb Filled Diabetic's Pumpkin Cream Cheese Roll Recipe

 

 

Mix together:
1 C sugar, 3 eggs, 1 tsp vanilla, ½ tsp baking soda, ½ tsp baking powder, 1 C pumpkin puree, 1 tsp salt, & 1 Tbs pumpkin spice seasoning.
Use a jelly pan & line with parchment paper. Pour batter into pan & bake at 350 for 13min. I used my nordicwareusaTake it out of oven and roll the loaf up to let it cool.

To make the filling mix together 8oz cream cheese, 6Tbs butter, splash of vanilla, splash of half & half, & 1 C powder sugar. Mix until very cream.

Once the loaf has cooled. Unroll & add the filling. Roll it back up & enjoy!😍
