15 cups mozzarella cheese
4 cups Almond Flour
5 Tablespoons RxSugar Cinnamon Syrup
1 Tablespoon RxSugar Vanilla Syrup
1/4 Teaspoon salt
1.5 Teaspoon Baking Powder
1/4 Teaspoon Xantham Gum
Powdered Cinnamon as desired
In a microwaveable safe bowl, put all 15 cups of mozzarella and melt until cheese is completely smooth and stretchy.
Add almond flour, salt, xantham gum, cinnamon syrup, vanilla syrup, and powdered cinnamon to cheese. If the dough seems too sticky then add another cup of almond flour.
Mix until all ingredients are completely embedded. Add in 1 egg to the dough and continue to knees with wet hands until all ingredients are well blended.
Roll and cut dough to desired shape and place on cookie sheet with parchment paper. Bake at 400 for 15 minutes or until golden color on top.
Once the cookie sheet is out of the oven, brush melted ghee and sprinkle with powdered cinnamon, Allulose and drizzle with Cinnamon syrup.
