Carb Filled Diabetic Lemon Loaf

Ingredients

1/3 C sour cream

1 tsp vanilla

2 tsp lemon extract

3 eggs

2 Tbs lemon juice

Zest of 1 lemon

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp salt

1 1/2 C gluten free flour.

1 C powdered sugar
-
2 Tbs milk
-
1 Tbs lemon juice,

2 tsp lemon extract.
Icing
Directions
Mix together 1/2 C butter & 1 C of RxSugar canister Add in 1/3 C sour cream, 1 tsp vanilla, 2 tsp lemon extract, 3 eggs, 2 Tbs lemon juice, zest of 1 lemon, 1/2 tsp baking soda, 1/2 tsp baking powder, & 1 tsp salt.. once combined add in 1 1/2 C gluten free flour. Beat well. Add to a greased loaf pan cook at 350 for 40 min or until done.
Icing
Mix 1 C powdered sugar, 2 Tbs milk, 1 Tbs lemon juice, 2 tsp lemon extract. Pour this onto the cooled loaf. Enjoy
