BBQ Chicken Tacos with Coleslaw
Coleslaw3/4 cups Mayo
2 tablespoon RX sugar
3 tablespoon apple cider vinegar
Shredded red cabbage (about two bags shredded or 1 head manually shredded
Salt & pepper to taste
Directions
Mix all the ingredients together, let sit at least 15-20 minutes in fridge before service
BBQ CHICKEN
4 boneless breast or thighs1/2 teaspoon pepper
2 teaspoons salt
2 teaspoons RX sugar
2 teaspoons cumin
2 teaspoons ground cinnamon
2 teaspoons ground chili
1 teaspoon paprika
Oil to cook in
Tortillas
Season chicken and add to cast iron and cook. Let rest
BBQ ONIONS
2 sweet onions sliced1 cup favorite BBQ sauce or make your own adding RX sugar
Canola oil.
Sauté onions, add BBQ sauce once caramelized.
PLATING
Warm tortillas, add chicken, onions and top with slaw.
