Carrot Cake by @nutriologa_anamaria

Who doesn't love carrot cake? This delicious recipe by @nuttriologa_anamaria allows you to indulge in a gluten-free, sucrose free recipe by replacing flour with almond flour, and traditional sugar with RxSugar Allulose Sugar! 

 

In a bowl mix

2 cups almond flour

1/2 cups starch or tapioca flour (or wheat)

2 tsp baking powder

2 tsp cinnamon

1/4 tsp cardamom

1/3 cup RxSugar Allulose Sugar

1/4 cup coconut sugar

 

In another bowl mix

3 eggs

1/4 cup coconut oil

3 tbsp vegetable milk

3 tbsp pure maple honey

1 tsp vanilla

 

Integrate both mixtures and finally add

1 Cup of grated carrots (squeeze out excess water)

1/3 cup chopped walnuts

 

Place in a previously greased mold or with baking paper.

Bake at 180C for 45 to 50 minutes
