Caprese in a Bowl
This is such an easy salad and one of my husband's favorites. I use plenty of tomatoes because that's what he likes.
To make the salad:
▪︎2 containers of Trader Joe's Ciliegine Fresh Mozzarella balls
▪︎6 - 8 oz cherry tomatoes
(I like Wholesum Organic Poppies from Sprouts)
▪︎fresh basil leaves
(I used about 4 very large leaves)
▪︎Italian vinaigrette (recipe below)
▪︎Italian seasoning
1. Make the vinaigrette and set aside or prepare a day ahead.
2. Drain mozzarella and add to a large bowl.
3. Wash and halve the tomatoes. Add to the bowl.
4. Pour on the vinaigrette*.
5. Add extra Italian seasoning to taste. Mozzarella is bland so start with 1 Tbsp.
6. Layer the basil leaves and roll them tightly. Slice thinly to make a chiffonade and sprinkle over the bowl. Stir to combine well.
7. Allow time for the flavors to combine before serving.
Serves 4-5
Italian Vinaigrette
¤ 1/4 cup red or white wine vinegar
¤ 1/4 cup avocado oil
¤ 1/4 cup extra virgin olive oil
¤ 3/4 tsp @redmondrealsalt salt
¤ 1 Tbsp @rxsugar liquid allulose or 2 tsp powdered monkfruit sweetener
¤ 1 tsp Dijon mustard
¤ 1 tsp garlic paste
¤ 1 tsp Italian seasoning
1. Whisk everything together except oils until blended.
2. Drizzle oil in while whisking until oil is incorporated and vinaigrette is emulsified.
*Use the amount of vinaigrette you like. I use enough to cover about half of the salad and I stir the mixture often. I don't like to waste the the vinaigrette.
